I have found a great, easy, fast recipe that I am falling in love with. I have made it a few times already. It is officially, my new, "It's 5pm and I don't know what to make for dinner" recipe! I make sure that I keep the ingredients on hand so that I can whip it up in a matter of minutes. The best part is that the kids and Husby love it! What is it? Six Can Chicken Tortilla Soup! I found the recipe here. But, here are my slight adjustments:

Ingredients:
1 (15 ounce) can whole kernel corn, drained
1 (14.5 ounce) cans chicken broth
1 (10 ounce) can cream of chicken
1 (10 ounce) can chunk chicken (I use the kind from Costco)
1 (15 ounce) can black beans
1 (10 ounce) can diced tomatoes with green chili peppers, drained
cumin, chili powder, cilantro, garlic powder, salt & pepper to taste

Directions:
Put everything into a large saucepan or stock pot. Simmer over medium heat until chicken is heated through. Serve over tortilla chips and top with shredded cheddar cheese.

My Tips: Be sure to add the seasonings to your taste and make sure to serve OVER tortilla chips. (The chips adsorb some of the liquid.)

  1. Ooh! I bookmarked this recipe months ago on allrecipes.com, but never tried it--but because you posted it, I HAVE to try it. :) Sounds so easy! Thank you and God bless you and your family!
